Perfect Prawn cocktail

We were at friends for dinner a couple of weeks ago and the food was delicious.  The prawn cocktail was insanely good, I simply had to ask for the recipe.  I couldn’t stop thinking about it afterwards, it was a taste of foodie heaven for me.

I had a play around in the kitchen to see if I could recreate and I came pretty close.  It was goooood.  I love a bit of spice so didn’t hold back on the Tabasco sauce.  The brandy gives it a whole new dimension.

King prawns

Optional – lobster meat sliced and smaller prawns

Avocado – cubed

Watercress – to top

You can add whatever else you like.  Celery can be nice to give a bit of a crunch.

The dressing

Half mayonnaise, half tomato ketchup.  Whisk it up and add salt and pepper to taste.

A dash of brandy and a few drops of Tabasco sauce depending on how spicy you like it.

The brandy and Tabasco totally lift the dressing and it is sooooo good.  Add a squeeze of fresh lemon on top and serve in a nice short glass.  I can’t wait to make it again soon. Sometimes old school is best.  Also a staple starter on Christmas day.
